I changed my preference in packing and putting away food. It means that around, I don't can as much. Anyway, I had these 5 year old or thereabout preserved canning. I don't recall when I changed the order around here. One year, I organized the kitchen. I do that from time to time.
I put a set of canning in a cupboard, which I don't use much. I keep a flower vase in there. I open the door to get my vase. Mostly though, I left the door shut.
The canning I had in there has better color, flavor, etc. than the rest of my canning.
The added ingredient of storage was: Dark.
My least favorite cans/jars of canning are my best canning. How is that?
I put them in there for long term storage. And something worked.
It reminds me of the story of Jesus making wine.
